Paneed Chicken with Lemon Butter Sauce Recipe

On one of my visits to Destin, Florida I had the most lovely chicken dish with a lemon butter sauce. The restaurant has since closed. Still craving this yummy dish, I decided to try to concoct a version myself. I searched for a lemon butter sauce recipe. I came across one from Emeril Lagassee. You can’t go wrong with Emeril. BAM!

Don’t let the term paneed scare you. It is a Cajun cooking term meaning pan fried, usually with bread crumbs. I have adapted it to use only flour, because that’s the way mama made it growing up. I also like to pound my chicken breasts with a mallet to get them to a uniform thickness so that they cook evenly. If you don’t the thinner portions get tough in order to get the thickest part thoroughly cooked.

Paneed Chicken

Ingredients:
4-6 Boneless, Skinless Chicken Breasts
2 Cups Self-Rising Flour, Divided
1 Large Egg
1/2 Cup Water
1 tsp. Salt
1/2 tsp. Black Pepper
Vegetable Oil for frying

Directions:
Place one chicken breast on a plastic cutting board and cover with plastic wrap. Pound with a wooden mallet until 1/2 inch thick. Repeat with remaining chicken breasts. On a dinner plate, place 1 cup of flour. In a bowl, add egg and water and mix with a fork until combined. On another dinner plate add remaining 1 cup of flour, salt and pepper and mix until combined. Take 1 chicken breast, dredge in plain flour, dip in egg mixture coating thoroughly, and dredge in seasoned flour.

Heat oil to 350 degrees in a nonstick skillet. It should be deep enough to cover the chicken breasts completely when frying. Carefully add the coated chicken breasts and fry on one side until golden brown. Flip breasts over and fry second side until golden brown. Insert a meat thermometer and make sure the chicken is thoroughly cooked. It should read an internal temp of 165 degrees.

{TIP} If the outside is brown and the inside is not quite done, place in a 350 degree oven to finish them off.

Place Paneed Chicken Breast on a plate and top with Lemon Butter Sauce.

 

Lemon Butter Sauce

Ingredients:
1 cup dry white wine
3 lemons, peeled and quartered
2 tablespoons minced garlic
1 tablespoon minced shallots
1 teaspoon salt
3 turns freshly ground black pepper
1 dash Worcestershire sauce
1 dash hot pepper sauce
1/2 cup heavy cream
1/2 pound (2 sticks) unsalted butter, cut up, at room temperature
1 tablespoon finely chopped fresh parsley

Directions:
Heat a large nonreactive skillet over high heat. When the skillet is hot, add the wine, lemons, garlic, and shallots. Cook for 3 minutes, breaking up and mashing the lemons with a wire whisk. Stir in the salt, pepper, Worcestershire, and hot sauce and cook until the mixture is somewhat syrupy, for about 3 minutes. Stir in the cream and cook for 1 minute. Over low heat, whisk in the butter a few pats at a time. When all of the butter has been added, remove from the heat, but continue whisking until all of the butter is incorporated into the sauce. Strain the sauce, pressing all of the liquid into a bowl. Stir in the parsley. Serve immediately, or keep warm for a few minutes until ready to use.

{TIP} You may have Lemon Butter Sauce left over. You can store it in the fridge for up to 5 days, or you can also freeze it. I recommend freezing it in ice cube trays so that you can pop out individual portions as needed. Just place them in a microwave safe bowl and heat until melted. This sauce is also great on grilled or fried fish.

Before I turned 39 I was looking for a special place to celebrate. While doing research
I found a website for A Spot of Tea in downtown Mobile on Dauphin Street.

I was instantly intrigued by their extensive menu and tea offerings. I decided to gather with my girls for a nice birthday lunch. The waitress recommended their famous Strawberry Iced Tea. After the first taste I was smitten. I must have had a pitcher all by myself that day.

I later went back for lunch with my mom. We go to lunch together at least once a week. While there I learned a special tip. After admitting how much I love the tea to my waitress, she told me they sold the strawberry syrup there and that was how you make it. I did not buy it that day.

Torani Strawberry Syrup

Upon my shopping trip to World Market this week I spotted Torani Strawberry Syrup in the coffee section. I decided to buy a bottle and see if I could recreate the magic at home myself. I was slightly nervous on the amount to use, etc. Upon trial and error I have perfected it for you to make at home. However, if you are ever in Mobile, Alabama I recommend you make a special trip to A Spot of Tea. It is one of my favoite places to eat brunch and lunch.

Strawberry Sweet Tea with Fruit Ice Cubes

Ingredients:

1 Lipton Family Size Tea Bag
1/4 Cup Torani Strawberry Syrup
3/4 Cup Sugar 1 Quart (approximately)
Water

Place the tea bag in a pot with water onto the stove. Turn on High and watch the pot until it just looks like it is ready to boil. Warning: Do not let the tea bag boil as it may bust and you will have tea leaves in your tea. Ain’t nobody got time for that! Remove from heat and turn off burner. Let the tea bag steep while you prepare the pitcher. Fill a Quart pitcher about 1/3 of the way with cold water. Add the sugar and stir so that it will start to dissolve. I use a quart Ball canning jar because it reminds me of Nana’s house.

Take the warm tea in your pot and pour into the sugar mixture. The heat will dissolve the sugar completely. Add the strawberry syrup to the mixture and stir. Fill the pitcher the rest of the way with cold water. Stir well to thoroughly mix the ingredients. Place in the refrigerator until well chilled. While the Strawberry Tea is chilling, make the Fruit Ice Cubes.

Items needed to make Strawberry Ice Cubes

Fruit Ice Cubes

Ingredients:

Strawberries
Water
Ice Trays (I used heart shape)

Cutting the Strawberries

Wash your strawberries. On a cutting board, cut the green tops off and slice them in 1/8″ slices.

Arrange the slices in the bottom of the trays and cover with water. I used some adorable heart trays I scooped up in Target’s bargain bins at the front of the store. The sliced strawberries fit into the heart trays perfectly. Place in the freezer until completely set and then you are ready to go.

What better container for Southern Sweet Tea? I wanted to make it cute, as if you were coming over to sip with me. I found some adorable Daisy Cut Lids at Tomkat Studios on etsy. I also found cute red and white striped napkins and paper straws at Target. I mean come on! Who doesn’t love a paper straw? I added some fun pink and white striped baker’s twine around my glass and made a bow to tie it off.

I added my Ball Canning Pitcher of Tea, My sweet blue Ball Canning glass, my shabby chic flower arrangement from last week and my Strawberry Ice Cubes, and my cute Dipped Strawberry salt shaker to a tray purchased from Hobby Lobby and took it to my font porch.

Ingredients:

Vegetable Oil
Extra Virgin Olive Oil
1 – 42 oz. Bag Frozen Cheese Tortellini
1 lb. Mild Italian Sausage (casings removed)
1/4 Cup Sliced Kalamata Olives
1 – 16 Oz. Can Petite Cut Sliced Tomatoes
2 Tsp. Minced Garlic (I use it from the jar)
1 Tsp. Dry Italian Seasoning
Salt and Pepper to taste

Instructions:

Bring a large pot of salted water to boil. Add a tablespoon of vegetable oil. Add cheese tortellini and boil until they float to the top. Do not over boil.

While pasta boils, add olive oil to a large frying pan. Fry and crumble sausage until brown. Don’t drain. Add salt, pepper and Italian seasoning. Mix well. Add tomatoes and olives. Mix well.

Drain pasta and add back to pot. Add sausage mixture and combine thoroughly. Serve immediately.

I serve this with a nice green salad and garlic ciabatta bread.

{Recipe} Quick Italian Cream Cake

Quick Italian Cream Cake

A slice from the Quick Italian Cream Cake I made.

What Southern girl does not love cream cheese and pecans?

This recipe was shared with me by my Mother-In-Law several years ago and I fell in love!

Several of my friends have asked me for the recipe, so I thought I would share!

I hope you give it a try and enjoy it.

Quick Italian Cream Cake

Ingredients

  • 1 (16.25-ounce) package white cake mix (I used Duncan Hines Moist Deluxe)
  • 3 large eggs
  • 1 1/4 cups buttermilk
  • 1/4 cup vegetable oil
  • 1 (3 1/2-ounce) can flaked coconut
  • 2/3 cup chopped pecans, toasted
  • 3 T Rum (optional)
  • Cream Cheese Frosting (below)

Preparation

  1. Beat first 4 ingredients at medium speed with an electric mixer 2 minutes. Stir in coconut and pecans. Pour into 3 greased and floured 9-inch round cakepans.
  2. Bake at 350° for 15 to 17 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes. Remove from pans, and cool completely on wire racks.
  3. Sprinkle each cake layer evenly with rum, if desired; let stand 10 minutes.
  4. Spread Cream Cheese Frosting between layers and on top and sides of cake. Chill 2 hours before slicing.

Cream Cheese Frosting

Ingredients

  • 1 (8-ounce) package cream cheese, softened
  • 1/2 cup butter or margarine, softened
  • 1 (16-ounce) package powdered sugar
  • 2 teaspoons vanilla extract
  • 1 cup chopped pecans, toasted

Preparation

  1. Beat cream cheese and butter at medium speed with an electric mixer until smooth. Gradually add powdered sugar, beating until light and fluffy. Stir in vanilla and pecans. Frost cake when completely cooled.

These are great when you are in a hurry for something warm and satisfying but not complicated. And let me tell you – these are so much tastier than those drive-thru sandwiches. Canadian Bacon and Egg Frying in Egg Ring

Quick and Easy Breakfast Sandwiches

Ingredients:
1 English Muffin, cut in half (I use Thomas Brand)
1 Slice of Canadian Bacon (I like Hormel Brand)
1 Egg
1 Slice American Cheese (I prefer Kraft Singles)
1 Tbs. Butter
Cooking Oil Spray such as Pam
Salt and Pepper, to taste

Heat a large skillet on medium high heat. Spray your egg ring thoroughly with non-stick cooking spray, inside and out, to prevent the egg from sticking. Place the egg ring in the pan. Cut the butter in half. Melt 1 half in your egg ring and the other half in the pan where you will fry your Canadian Bacon. While the butter melts, place the English Muffin in the toaster or toaster oven on medium. Crack the egg into the ring. Place the Canadian Bacon over the butter and flip immediately to coat both sides. Sprinkle the top of the egg with salt and pepper. Carefully watch the egg until set. When the egg is set an no longer translucent, lift the egg ring off. It should slide off, but if not run a knife around the inside edge to loosen. Flip the egg over with a large spatula and sprinkle with a little more pepper. Cook until done. Flip the Canadian bacon over. Cook until browned. Once all of the items are completed, assemble the sandwich. Place the egg on the bottom half of the English muffin. Top with the Canadian Bacon. Top with the cheese slice. Finish with the English Muffin Top.

Makes 1 serving but can easily be made for the number of guests you are serving. You can omit the cheese until ready to serve and keep them warm in the oven on 200 degrees while you cook the others. Just top with cheese before serving.

Quick and Easy Mediterranean Hummus

2 Whole Wheat Flatbreads or Pitas (cut into eighths) (I use Flatout Brand)
1-2 Tbs Olive Oil
1 10 oz. Package of Sabra Classic Hummus
1 Tsp. Minced Garlic, raw (I buy pre-minced in the jar to save time)
2 Green Onion Tops, sliced
4 Fresh Basil Leaves, ribboned
2 Seeded Campari Tomatoes (or plum tomatoes), diced
10-12 Pitted Greek Kalamata Olives
2 Tbs. Crumbled Feta Cheese

Preheat oven to 350 degrees. Cut the flatreads into 8 triangles per flatbread. Place on baking sheet and lightly brush the tops with olive oil. Bake for 10 minutes or until golden brown.

While the flatbread bakes, assemble the hummus. Scoop the hummus onto a nice serving platter in a circular and flat shape. Cut the green onion tops into slices. I find using kitchen scissors works best for this. Roll the basil leaves up and slice across to make ribbons. Sprinkle the minced garlic, basil, tomatoes, feta and green onions over the hummus. Top with the Greek kalamata olives.

Serve with warm pita chips when done.

Serves 4-6 as an appetizer.

TIP: Make it Gluten-Free by substituting cut up
veggies such as carrots and broccoli
in place of the flat bread.

Now that Mardi Gras is over are you wondering what to do with all of those Moonpies you caught at the parade?

I stumbled upon a couple of clever ideas from The Chattanooga Bakery’s Moonpie Website.

Banana+MoonPie Pudding

Ingredients:

  • 1 – 5.1oz box of instant vanilla pudding
  • 1 – 14oz can of sweetened condensed milk
  • 1.5 cups of cold water
  • 3 cups heavy whipping cream***
  • 1 box of your favorite MoonPie

Instructions:

Mix first three ingredients well and refrigerate until set (4hrs-overnight.)After the pudding has set: whip 3 cups heavy whipping cream until you soft peaks form. Then, fold pudding into the whipped cream until smooth and creamy. For presentation use a large container to layer pudding, crushed MoonPies (choose your favorite flavor), banana slices, repeat and top with crushed MoonPies.

***I love short cuts, so I recommend substituting whipped topping in lieu of whipping the cream yourself. – Kristal

Strawberry MoonPie Shortcake

Ingredients:

  • 1 box of Vanilla MoonPie
  • 4-6 fresh chilled strawberries
  • Whipped Cream

Instructions:

Place MoonPie in a bowl. Use a fork to poke holes in the MoonPie to let the juice soak in. Cover the MoonPie with the strawberries (and the juice), then add some whipped cream. Let sit for 5 minutes (if you can wait that long).
